TATAKI DI MANZO ALL ITALIANA CON SALSA AL PEPERONCINO E AL FINOCCHIO

Ingredienti: 500 gr manzo (scamone) 1/2bicch.aceto di riso italiano 1/2 bicch.aceto balsamico di modena zenzero grattuggiato 5gr. circa 3 funghi champignons rametto finocchietto 1 finocchio 5 fogli spinaci 4 pomodori 1 peperoncino 1 spicchio aglio olio sale q.b. pepe rosa 1/2 bicch. zibibbo

Inizio tagliando lo scamone in 2 parti rettangolari e uguali poi le metto a marinare con l’aceto balsamico l ‘aceto di riso il pepe rosa e lo zenzero grattuggiato , la stessa marinatura la metto da parte per poi farla amalgamare e fare la salsa. Poi faccio sbianchire il finocchio e poi le foglie degli spinaci che metto subito in ghiaccio appena scolati. Poi frullo il tutto aggiungendo l acqua della sbianchitura poi passo al colino . pulisco i pomodori privandoli dei semi e della buccia taglio la polpa al coltello e e aggiungo in padella all olio con l aglio in camicia e il peperoncino , poi levo l aglio e faccio cuocere per una decina di minuti, levo il peperoncino . faccio freddare e frullo. Taglio i funghi lasciano un po il gambo intero e taglio le cappelle finemente. Passo in padella con olio e aglio poi sfumo con lo zibibbo e faccio cuocere. Passo la marinatura levata all inizio in padella aggiungengo sale a piacere . Dopo averlo fatto marinare prendo il manzo lo passo in padella antiaderente con un filo di olio a fiamma viva e velocemente giro su tutti e 4 i lati del tataki . appena cotto faccio freddare , taglio diagonalmente e servo sul piatto con la salsa sopra al manzo e impiatto con le salse e un funghetto .
