Preparazione
Mettere a bagno i fagioli secchi per almeno 12 ore,farli bollire 2 ore in acqua non salata e metterli a scolare a fine cottura in uno scolapasta.
Sgrassare le cotiche con l’aiuto di coltello e tagliere levando il grasso in eccesso all’interno della cotica.
Tagliare le cotiche a striscioline e farle bollire per 1 ora in acqua non salata per poi scolarle.
Tritare cipolla,sedano e carota,farli soffriggere in casseruola un paio di minuti insieme all’ aglio in camicia,peperoncino e olio evo.
Aggiungere al soffritto le cotiche e sfumare con il vino,evaporata la parte alcolica Mettere un pizzico di sale, aggiungere fagioli e pomodoro lasciando sobbollire il tutto per 1 ora e mezza,all’occorrenza aggiungere un po’ di acqua calda.
A cottura terminata assaggiare e assestare di sale e pepe.
Nel frattempo preparare la bruschetta cotta sulla piastra,condire con olio evo,sale e erba cipollina.
Servire i fagioli con le cotiche in una ciotola con pezzetti di bruschetta e un filo di olio evo a crudo.
